In the preparation of pan-seared scallops & beef chorizo with maple butter, the beef chorizo is dehydrated using a dehydrator machine. The pan-seared scallops are placed inside their shells, and maple butter prepared with maple syrup and red Mexican peppers is melted over them. Served with fried malt bread, cilantro leaves, shredded chorizo, and sliced lime, the dish offers a delightful combination of flavors.

In the Linguine & red shrimp tartare, the red shrimp shells are turned into a bisque sauce using mire poix vegetables, kaffir lime leaves, lemon grass, and other ingredients. Freshly made pasta is cooked with the bisque sauce and served on a plate. Fresh blue shrimp are flavored with lime zest, lemon zest, lemon juice, and Maldon salt, placed on top of the pasta in tartare form, and garnished with spicy olive oil, spring onions, and stone-biting caviar.

For the pan-seared bourbon glaze lamb loin & sweet and sour chestnut mushroom, lamb loins are sous vide with olive oil and fresh thyme. Bourbon sauce is prepared by first obtaining an Asian-style lamb jus with lamb bones, ginger, rice vinegar, sesame oil, and other ingredients. Sliced potatoes are cooked with pecorino, parmesan, nutmeg, and butter to create a potato terrine for the dish.
